Chef Franco Paulino was born into a legacy of culinary excellence, raised in the kitchens of fine dining restaurants where food was both an art and a way of life. By 2021, he had taken the helm as Chef de Cuisine at Flight West, an acclaimed upscale eatery in Greece, NY.
That same year, a young culinary student named Rachel LaRocca walked into the kitchen as part of a school internship. Bright, determined, and filled with ambition, Rachel quickly proved she had the heart and skill to thrive in the industry. Franco saw her potential — and took her under his wing. Together, they built something remarkable. As Rachel rose to Sous Chef, the two forged a dynamic partnership, turning Flight West into one of the west side's most beloved dining destinations.
Now, they bring that same energy, vision, and commitment to excellence to their own restaurant in the heart of Mendon, NY.
